These enchiladas are awesome. Flavor-packed shredded chicken is rolled up in corn tortillas and smothered in homemade verde sauce. The entire recipe can be made ahead, freeze all or part of it for a speedy dinner later on. And the tomatillo sauce makes enough for at least two more enchiladas pans, making a super quick meal for the future.
