There’s something about finding an incredibly tasty meal, that is also super healthy, just so exciting to me. Dairy-free, check. Gluten-free, check. Protein-rich, check. I kept snacking on the vegetables as they were grilling, and was licking the bowl clean after digging into these black bean noodles with grilled vegetables, covered in lemon sauce and almonds.
