Vegetarian Meatloaf with Accordion Potatoes

We love the Marshall Field’s meatloaf so much, it should be enjoyed by vegetarians, too. Not typical, more of a Mediterranean-style, with pesto, pine nuts and spinach, but incredibly delicious and moist and serves with red pepper gravy and some fun accordion potatoes.
