Pot au Feu (French Beef Stew)

When my husband and I were dating, we traveled to Colmar, France and ate one of the most wonderful meals of our trip. I ordered the Pot-au-Feu, which was essentially a stew made with hearty meats and bones and earthy vegetables. This is the perfect winter dish, filled with rich flavors and healthy bone broth.
