Seared Scallops with Risotto

Scallops are very quick to prepare, meaty and don't have any kind of fishy flavor. This meal is all about keeping a watchful eye: getting the sear on the scallops right, and stirring the risotto until it is cooked through, one ladleful of stock at a time. The end result is worth it.
